These mini cheesecakes are perfect for parties where there are multiple dessert options. I love cheesecake but it is just so filling I rarely finish it. Many times I just decide to not even eat the cheesecake because I just know I won’t finish it. I found this recipe because I was looking for a way to enjoy cheesecakes. The only thing that I would improve next time is I would make sure to allow the cream cheese to soften extra because mine came out a bit lumpy. I copied and pasted the recipe below and put any comments I had in italics and in parentheses.

Ingredients:

Mini Cheesecake Cupcakes

  • 1 cup graham cracker crumbs (I would recommend crushing them in a plastic bag)
  • 4 tablespoons unsalted butter melted (half stick)
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese softened (two standard bricks and make sure that it is softened not just spreadable but softened)
  • 1/2 cup sour cream
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • caramel sauce or strawberry sauce for topping optional (I made the strawberry sauce… see below)

3 Ingredient Strawberry Sauce

  • 1 cup strawberries halved (I used frozen strawberries but both are okay)
  • 1/2 teaspoon lemon juice
  • 2 teaspoons granulated sugar

Easy Caramel Sauce (I did not make it but I included it if you wanted to make it)

  • 2 cups light brown sugar
  • 1 stick plus 4 tablespoons unsalted butter
  • 1 cup heavy cream
  • 2 teaspoons vanilla extract
  • sea salt for serving if desired
